Pot Luck Post No. 8: Risotto, Fajitas, Burritos, Roulade, and Chilaquiles
Cynthia Furey’s photo of the Shrimp and Slow-Roasted Tomato Risotto at her blog Furey and the Feast looks more like what we made than the official photo in our cookbook. Thank you Cynthia! So validating to see it. And her blog is so (don’t be mad Cynthia!) neurotically familiar (as in: “But my nerves subsided slightly when I met Tara Mataraza Desmond. Her friendly nature put me at ease.” Me too! That exact same thing happened to me when I met Tara!). I have RSSed you, Furey and the Feast.
When we worked out our recipe for fajitas, I really did think they were the best. Imagine how good it was to read that Sandra Gutierrez, author of the blog Sandra’s Kitchen, said of our little fajitas recipe: “I am not exaggerating when I say that these are the best fajitas I have ever had. Ever, ever. And I am proud to say I’ve had many”
I wish I had Hank Sawtelle’s sous vide equipment. And his expertise. Because, armed with a sous vided pork shoulder, he made the best looking (and I’m sure tasting) version of our Posole Burritos with Escabeche Slaw that there could ever be.
Sarah Copeland, author of Edible Living, transformed an Almost Meatless recipe into a totally meatless meal. This is her version on our Grits Roulade. We really approve of that. Seriously, vegetarians should also have our book.
Can you believe that Ivy Manning has also written a cook book about flexitarian eating and yet we are not even related? She made Chilaquiles and posted it to her blog Ivy’s Feast. Not only do with have a last name and culinary point of view in common, apparently we both adore super spicy foods.
