Whew, that’s good to see.
It’s amazing what a couple days of CSA-box eating can do. Last night: a big bed of greens tossed with a dressing I made from soft-braised cipollini onions mashed to a paste with champagne vinegar, lemon juice, olive oil, salt and pepper. It was creamy and delicious. I topped the greens with cubes of roasted beet, toasted walnuts, and blue cheese crumbles. On the side we had roasted potato wedges with homemade mayonnaise, which also had a dollop of the cipollini paste stirred in. Delicious.
Tonight’s meal will be more CSA fare: a grated raw zucchini salad with Parmesan and toasted pine nuts (a longtime specialty of my house; I will take notes and post the recipe) and flageolet beans (not from the CSA box) tossed with homemade pesto. I’m looking forward to it already.
I’m thankful I really and truly crave these kinds of healthy meals. Otherwise, I’d be fat as a house.
